Fruit Mince Scones

- 2 cups self-raising flour, sifted
- 60grams butter, chilled, chopped
- 1/2 cup fruit mince
- 3/4 cup milk (save 1 tbs to brush )
- 1/2 cup raspberry jam
- 1/2 cup thickened cream, whipped
Description
Give traditional scones a festive twist by adding a heady dose of fruit mince to the dough. Serve them with a berry jam and whipped cream.

Step 1 of 3
Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper.
Step 2 of 3
Place flour in a large bowl. Add butter and a pinch of salt. Using fingertips, rub butter into flour mixture until mixture resembles breadcrumbs. Make a well in centre, then add fruit mince and milk. Using a flat-bladed knife, stir until a sticky dough forms. Turn dough out onto a lightly floured surface and knead until just smooth (don't over-knead).

Using a lightly floured rolling pin, roll out dough until 2cm thick. Cut as many 6cm rounds from dough as you can. Press leftover dough together and repeat rolling and cutting to make a total of 8 rounds. Place rounds, just touching, on tray. Brush with extra milk, then bake for 12 minutes or until golden and hollow when tapped. Allow to cool for 10 minutes, then serve with jam and cream.
