  • 1 cup self-raising flour
  • 1teaspoons vanilla essence
  • 3/4 cup milk
  • 2tablespoons rum (optional)
  • 60grams butter, melted
  • ramekins
  • 1/2 cup milk choc bits
  • 2tablespoons cocoa powder
  • 1tablespoons cocoa powder (extra)
  • 1/4 cup espresso coffee, freshly made, cooled
  • 6 scoop vanilla ice cream (to serve)
  • 1 egg
  • 1/3 cup brown sugar

Method

Step 1 of 4

Preheat oven to 180°C. Grease 6 x 150ml ramekins and place onto a baking tray.

Step 2 of 4

Sift flour and cocoa into a large bowl. Stir in sugar and chocolate bits. Whisk milk, egg, butter, coffee and vanilla together in a bowl. Pour wet ingredients into flour mixture and stir to combine. Divide mixture between ramekins.

Step 3 of 4

Combine extra sugar and cocoa in a bowl. Sprinkle evenly over puddings. Combine 1 1/4 cup boiling water and rum. Pour evenly over puddings. Bake puddings for 20 minutes or until set.

Step 4 of 4

Transfer to saucers and dust with cocoa. Serve with a scoop of ice-cream.
