- 2tablespoons caster sugar
- 1 1/2 cup hazel nut meal
- 1 2/3 cup gluten-free plain flour

Method
Step 1 of 3
Preheat oven to 200°C. Grease 23cm flan pan. Process 1 2/3 cups gluten-free plain flour, 1/2 cup hazelnut meal, 2 tbs caster sugar and 125g cold butter in a food processor until resembles breadcrumbs. Add 1 egg and process to form a dough.

Wrap in plastic. Chill for 30 minutes. Roll out pastry. Fit into pan. Prick base. Line with baking paper. Fill with dried beans. Bake for 15 minutes. Remove beans and paper. Bake for 10 minutes. Cool. Reduce oven to 180°C.
Step 3 of 3
Beat 4 eggs, 3/4 cup sugar and 1 tsp vanilla extract until thick. Stir in 1 cup thickened cream, 1 tbs gluten-free cornflour and 1/2 cup hazelnut meal. Pour into pastry. Layer 2 sliced apples over. Bake for 45 minutes.
