  • 1/3 cup currants
  • 4-8 drops yellow food colour (for orange icing)
  • 2 cup plain flour
  • 1/3 cup self-raising flour
  • 1 1/2 cup icing sugar, sifted (for orange icing)
  • 135grams butter, softened (save 10g melted butter for orange icing)
  • 1teaspoons vanilla extract
  • 1 orange, juiced and rind finely grated
  • 1 egg
  • 1/2 cup caster sugar
  • 4-8 drops red food colour (for orange icing)

Method

Step 1 of 9

Preheat oven to 180°C. Line two large baking trays with baking paper.

Step 2 of 9

Beat butter, sugar and vanilla in a bowl until pale and creamy.

Beat in egg.

Sift flours together.

Step 5 of 9

Add to the butter mixture and stir until combined.

Halve dough. Roll out one portion between two sheets of baking paper until 5mm thick. Cut out 15 biscuits using a 6cm fluted cutter. Place onto prepared trays. Bake for 15 minutes or until firm. Cool on trays. Repeat with remaining dough. Decorate with royal icing and sandwich with buttercream.

Follow vanilla cream biscuits recipe from step 1 to 5, adding currants, orange rind and 2 tbs orange juice at step 3 and extra flour at step 4.

Halve dough. Roll out one portion between two sheets of baking paper until 5mm thick. Cut out biscuits using a 6cm round cutter. Place onto prepared trays. Bake for 15 minutes or until firm. Cool on trays. Repeat with remaining dough.

Meanwhile, make the icing. Combine icing sugar, butter and remaining orange juice, stirring until smooth. Stir in drops of food colour to reach desired shade. Spoon or spread onto cooled biscuits. Leave to set.
