  • 1/4 plain flour (for coating)
  • 1tablespoons milk
  • 1teaspoons vanilla extract
  • 2 bananas, peeled, halved
  • 2tablespoons small mint leaves (to garnish)
  • 1/2 cup coconut, shredded
  • 8 small scoops vanilla ice-cream
  • 1L vegetable oil (for deep frying)
  • 1 egg
  • 1/2 cup breadcrumbs

Method

Step 1 of 3

Combine breadcrumbs with coconut in a bowl. Whisk egg in a separate bowl with milk and vanilla.

Step 2 of 3

Heat oil in a large saucepan. Coat banana pieces in flour, shaking off excess. Dip into egg, then coat with coconut crumbs. Re-coat by dipping into egg and crumbs a second time.

Step 3 of 3

Lower banana pieces in batches, into hot oil and deep fry, turning, until golden all over. Remove with a slotted spoon and drain on a paper towel. Serve with ice-cream and mint.
