- 2 cups frozen peas
- 1/3 cup light ricotta
- 2 cloves garlic, crushed
- 1 lemon, juiced
- 2tablespoons extra virgin olive oil
- 1/2 bunch mint, leaves picked, roughly chopped
- 16 wholegrain crispbreads (to serve)
Description
This easy quick pea and mint pesto recipe is perfect to dip, spread or toss through pasta. Whiz up this healthier snack for the kids today.
Method
Step 1 of 2
Place peas in a heatproof bowl, cover with boiling water and stand for 5 minutes or until bright green and tender. Drain. Refresh under cold water, then drain.
Step 2 of 2
Place peas, ricotta, garlic, lemon juice, oil and mint in a food processor and process for 1 minute or until almost smooth. Serve with crispbreads.
