- 1/2teaspoons cinnamon
- 1tablespoons maple syrup
- 1 cup rolled oats
- 1/4 cup sunflower seeds
- 10 medjool dates
- 100grams olive oil spread, melted
- 1 free-range egg, lightly beaten
- 1/4 cup pepitas
- 1/2 cup dried apricots

Method
Step 1 of 4
Preheat oven to 180°C. Line an 18x28cm baking pan.
Step 2 of 4
Add dates, apricots and rolled oats to a blender and blitz to a fine powder. Add pepitas and sunflower seeds. Pulse to roughly chop.
Step 3 of 4
Transfer to a bowl and add cinnamon, olive oil spread, egg and maple syrup. Mix well. Press flat into pan.
Step 4 of 4
Bake for 20 minutes or until firm. Cool for 10 minutes. Turn onto a board and cut into desired shapes.
