  • 5milliliter virgin olive oil spray
  • 1/4teaspoons nutmeg
  • 1/4teaspoons paprika
  • 2 cup macaroni, cooked
  • 1 1/2 cup kale, roughly chopped
  • 2 cup low-fat milk
  • 80grams feta, crumbled
  • 1tablespoons olive oil
  • 2 eggs, lightly whisked
  • 1 cup light tasty cheese, shredded

Method

Step 1 of 3

Gradually whisk in milk and continue to stir for 3 minutes or until mixture has thickened. Add cheese, paprika and nutmeg, and stir to combine. Remove from the heat and allow sauce to cool slightly.

Step 2 of 3

Add cooked macaroni, kale, carrot, zucchini and eggs, and stir to combine.

Step 3 of 3

Divide mixture among 12 muffin holes. Place a few pieces of feta on top of each puffin. Cook in oven for 15 minutes or until lightly golden on top.
