  • 500grams chicken tenderloins, halved
  • 1 cup cauliflower, diced
  • 1 cup sweet potato, diced
  • 1tablespoons extra virgin olive oil
  • 1 cup plain yoghurt
  • 1 cup parmesan, grated
  • leafy green salad (to serve)
  • 4 slice wholemeal sandwich bread, well toasted

Method

Step 1 of 3

Preheat oven to 200°C and place a rack over a lined baking tray. Brush rack with a little oil.

Step 2 of 3

Process toasted bread, cauliflower, sweet potato and parmesan in a food processor to breadcrumb consistency.

Step 3 of 3

Place yogurt and crumb mixture in separate bowls. Lightly coat chicken pieces in yoghurt, then dip in crumb and place on rack. Drizzle with remaining olive oil and bake for 20 minutes, without turning, until golden and cooked through. Serve with salad.
