  • 2teaspoons sesame oil
  • 6 capsicums
  • 1 carrot, diced
  • 4 spring onions, chopped
  • 50grams snow peas, sliced diagonally
  • 3teaspoons sunflower oil
  • 3 free-range eggs
  • 1 garlic clove, crushed
  • 1/2 cup frozen peas, thawed
  • 1/2 cup frozen corn, thawed
  • 2 cup brown rice

Method

Step 1 of 4

Preheat oven to 180°C. Cut the tops off capsicums and remove the seeds. Using a small, sharp knife, cut faces. Reserve off-cuts.

Step 2 of 4

Place capsicum cups and tops on a tray and bake for 15 minutes. Whisk eggs with sesame oil. Heat 1 tsp sunflower oil in a frying pan over medium heat, add eggs and swirl to coat pan. Cook over medium heat, swirling for 2-3 minutes until egg is just set. Slide onto a plate.

Step 3 of 4

Heat 2 tsp sunflower oil in a large frying pan or wok, add spring onions, garlic, peas, corn, carrot and reserved capsicum and cook over high heat for 3 minutes. Add rice and snow peas and stir-fry for 1 minute. Stir in soy sauce and cook for 2-3 minutes.

Step 4 of 4

Roll omelette up into a cigar shape and slice into 1cm-thick strips. Spoon fried rice into hot capsicum. Layer strips of egg to form spooky brains.
