Apple Cinnamon & Oat Bread
  • 1/4 cup sunflower oil
  • 2/3 cup milk
  • 2 red apples, cored, grated
  • 1teaspoons ground cinnamon
  • 1/2 cup rolled oats
  • 1 1/2 cup wholemeal self-raising flour
  • 2 eggs
  • 2tablespoons brown sugar

  • 1 wholemeal english muffin, halved
  • 50grams lean chicken breast, cooked, shredded
  • 1/2 tomato, sliced
  • 40grams cheese block, sliced
Snacks
  • 3 dried apricots
  • 1/3 corn on cob, steamed
  • 1tablespoons sunflower seeds

Method

Step 1 of 4

Top muffin halves with chicken, tomato and cheese. Place under oven grill until cheese has melted. Allow to cool.

Step 2 of 4

Preheat oven to 180ºC/160ºC fan-forced. Spray a 10 x 20cm (6cm deep) loaf pan with oil and line base with baking paper, allowing paper to overhang sides. Place flour, oats, sugar and cinnamon in a large bowl. Stir in apple. In a separate bowl, whisk eggs, milk and oil together. Add flour to egg mixture and stir until just combined. Spoon mixture into pan. Bake for 45 minutes or until a skewer inserted into centre comes out clean. Set aside to cool for 5 minutes. Remove from pan and set aside on a wire rack to cool completely. Place one slice in lunch box. Store remaining loaf in an airtight container in the fridge. (Apple, cinnamon & oat bread serves 10.)
