  • 650grams cubed watermelon, peeled,diced
  • 1 lebanese cucumber, chopped
  • 1/4 cup mint leaves, shredded
  • 2 cup cherry tomatoes
  • 2 limes juiced
  • 1 cup brown rice, cooked
  • 1 cup low-fat ricotta
  • 2 cup lettuce
  • 4 small chicken breast fillets, split crossways
  • 2/3 cup light cheddar, grated
  • 3/4 cup packaged breadcrumbs
  • 1/4 cup wholemeal plain flour
  • 1 free range egg, lightly beaten
  • 5milliliter olive oil spary

Method

Step 1 of 4

Alternate chunks of schnitzel, cucumber and tomatoes on bamboo skewers.

Step 2 of 4

For the salad, mix brown rice, cucumber, watermelon, lettuce, and ricotta in a bowl.

Step 3 of 4

In a separate bowl, mix mint and lime juice

Step 4 of 4

Drizzle the lime dressing over rice salad and serve with skewers.
