- 75grams RSPCA approved skinless chicken breast
- 1/4 green capsicum, chopped
- 30grams cheese block
- 1 1/2 cup corn kernels
- 2tablespoons organic full cream milk
- 1/3 cup ricotta cheese
- 1/4 cup wholemeal self-raising flour
- 1 free range egg
- 9 brown rice crackers no salt
- 1 apple, thinly sliced

Place a third of fritters in an airtight container, Pack next to cool brick in lunch box to keep cool. Freeze leftover fritters, wrapped in plastic, for up to 1 month.
Chicken Skewers: Cut into cubes and grill chicken breast. Turning for 3 minutes or until cooked through.
