Sandwich
  • 40grams cheese reduced fat, slice
  • 1/2 carrot, grated
  • 1/4 Lebanese cucumber, sliced
  • 2 slice wholemeal soft sandwich bread
Snack 1
  • 2 1/2tablespoons rice malt syrup
  • 3/4 cup pepitas
  • 1tablespoons sesame seeds
Snack 2
  • 100grams honeydew melon
  • 100grams watermelon
Snack 3
  • 40grams red capsicum, cut into sticks
  • 1 egg, hard-boiled

Method

Step 1 of 4

Place cheese, cucumber and carrot on bread slice, then sandwich with remaining slice.

Step 2 of 4

Snack 1: Preheat oven to 160ºC/140ºC fan-forced. Line a baking tray with baking paper. Combine pepitas, sesame seeds and syrup in a large bowl. Spread mixture onto tray in an even layer, about 1cm thick. Bake for 20 minutes oruntil a deep golden colour and crisp. Set aside to cool completely. Break into bite-size pieces. Store in an airtight container. (Crackers serve 10.)

Snack 2: Using a melon baller, scoop balls from melons. Thread alternating balls of watermelon and honeydew onto wooden pop sticks. Pack in an airtight container.

Snack 3: Place halved egg and capsicum into separate containers.
