Vegie Crumbed Chicken Nuggets
- 1 cup diced cauliflower
- 1 cup diced sweet potato
- 1tablespoons extra virgin olive oil
- 1 cup Greek-style yoghurt
- 1 cup grated parmesan
- 4 wholemeal bread slices
- 500grams chicken tenderloins
Wraps
- 2/3 cucumber
- NaN lime
- 1/3 cup reduced-fat Greek yoghurt
- 1 1/3 cup gem lettuce leaves

Top lettuce leaves with chicken and cucumber.

In a small bowl, mix together yoghurt and lime juice and season with pepper. Store dressing in a sealed container in the lunch box for drizzling over lettuce wraps.
