  • 1 apple (for snack)
  • 200grams broccoli, cut into florets
  • 1/4 red capsicum (for snack)
  • 1/3 lebanese cucumber (for snack)
  • 185grams tuna chunks in springwater, drained, flaked
  • 100grams shredded tasty cheese
  • 1/2 cup wholemeal self-raising flour
  • 2 free range eggs

Method

Step 1 of 5

Place broccoli in a steamer over a pan of simmering water, cover and steam for 3 minutes or until tender. Refresh under cold running water, then drain. Coarsely chop.

Step 2 of 5

Whisk eggs and flour in a medium bowl. Add tuna, broccoli and cheese. Stir to combine.

Step 3 of 5

Heat a large non-stick frying pan over medium heat. Lightly spray with oil. Place 2 heaped tablespoonfuls of tuna mixture in pan and cook for 2 minutes on each side or until golden and cooked through. Repeat to make a total of 12 fritters. Set aside to cool. Store in an airtight container in the fridge until required. (Fritters serve 3.)
