- 2 Qukes baby cucumbers, quartered
- 1/2 carrot, cut into sticks
- 4 strawberries

- 1/3 cup Greek-style yogurt
- 4 rye mountain bread wraps
- 1 cup baby spinach, roughly chopped
- 1 tomato, diced
- 6 extra large free range eggs, whisked
- 1/2 cup tasty cheese, grated

Method
Step 1 of 4
Preheat oven to 180°C. Lay two pieces of mountain bread on a chopping board next to each other. Lightly brush both with water. Top with another piece of mountain bread. Cut stacks into quarters so you have eight small squares.
Step 2 of 4
Gently press each square into the holes of two 6-hole muffin trays. Divide spinach and tomato between mountain bread cups and pour over egg. Sprinkle with cheese and bake for 20 minutes or until egg sets. Serve.

Snack 1: Pack strawberries, carrot and cucumber in lunch box.
Step 4 of 4
Snack 2: Pack yoghurt in an airtight container.
