- 500grams Angus beef & smokey chipotle chilli sausages, casings removed and discarded
- 1/4 cup extra virgin olive oil (plus extra to serve)
- 8 free range eggs
- 200grams tzatziki
- 200grams loaf stone-baked Turkish bread, halved, split, toasted
- 60grams baby spinach leaves
- 1/4 bunch mint, leaves picked
- 1 Lebanese cucumber, peeled into ribbons

Description
This fried egg recipe with smoky beef sausages is a quick and easy breakfast idea. Serve with fragrant mint and creamy tzatziki for a great way to start the day.
Method
Step 1 of 3
Break sausage mince into pieces. Heat 1 tbs oil in a large frying pan over medium-high heat. Add sausage mince and cook, breaking up pieces with a wooden spoon, for 7 minutes or until browned. Transfer to a paper towel-lined plate and set aside.
Step 2 of 3
Heat remaining oil in a separate frying pan over medium-high heat. Working in 2 batches, crack eggs into pan and cook for 3 minutes or until whites are set.
Step 3 of 3
Spread tzatziki on plates, then top with a piece of bread, 2 eggs and sausage mince. Arrange spinach, mint and cucumber over egg. Serve drizzled with extra oil and seasoned with pepper.
