Method

Step 1 of 2

Heat oil in a large frying pan over medium-high heat. Cook onion and capsicum, stirring, for 4 minutes or until softened. Add mince and cook, breaking up lumps with a wooden spoon, for 5 minutes or until browned. Add seasoning and cook, stirring, for 1 minute or until fragrant. Add 1/2 cup each of the salsa and water, stirring to combine. Cook for a further 2 minutes or until slightly thickened.

Place lettuce leaves on a board, then spoon mince mixture onto leaves and top with cheese, avocado, tomato and coriander. Serve with remaining salsa.
