- 1/4 cup extra virgin olive oil
- 1teaspoons dried oregano

- 1tablespoons balsamic vinegar
- 200grams tzatziki dip
- 120grams mixed baby salad leaves

Description
Discover how to make zesty salmon skewers in only three steps and 25 minutes. They’re perfect for barbeques and speedy weeknight dinners.
Method
Step 1 of 3
Combine paprika, oregano, 2 tbs oil, zest and lime juice in a bowl. Add salmon and toss to coat.
Step 2 of 3
Place 3 zucchini ribbons on top of each other to form a stack. Repeat with remaining zucchini ribbons. Alternate threading zucchini stacks and salmon onto 12 skewers. Heat a large greased chargrill pan over high heat. Cook skewers, turning, for 6 minutes or until salmon is almost cooked through. Season.
Step 3 of 3
Combine salad leaves, vinegar and remaining oil in a bowl. Season. Serve skewers with tzatziki, salad leaves and extra lime.
