Description

Learn how to create delicate egg nets with this beef bulgogi recipe. You'll save time using a pre-cut veg stir-fry mix; perfect for beating the midweek dinner rush.

Method

Step 1 of 3

Heat 2 tsp oil in large non-stick frying pan over high heat. Using a whisk dipped in egg, drizzle egg over pan, zig-zagging backwards and forwards, then side to side to make a net. Drizzle some egg in a circle around edge of net to make a border. Cook until set, then transfer to a plate. Repeat with remaining egg to make a total of 4 nets.

Remove beef, including marinade, from packaging and place in a bowl. Using 2 forks, separate beef into slices. Heat remaining oil in same frying pan over high heat. Add beef and marinade, then cook, stirring, for 3 minutes or until browned. Add vegetables, apple and 2 tbs water, then cook, stirring, for 2 minutes or until beef is cooked through and vegetables are tender.

Meanwhile, cook rice according to packet instructions. Top egg nets with rice, beef mixture and coriander. Serve with lime.
