- 800grams corn kernels, rinsed, drained
- 2tablespoons extra virgin olive oil
- 600grams beef scotch fillet steaks
- 1tablespoons cajun seasoning
- 3 spring onions, thinly sliced
- 1 long red chilli, finely chopped
- 1 lime, juiced (plus extra lime halves to serve)
- 120grams baby spinach and rocket leaves
- 1 avocado, deseeded, peeled, cut into wedges
- crusty bread (to serve)
Description
Fire up the barbie for a delicious midweek dinner featuring Cajun spiced beef paired with a charred corn salad.
Method
Step 1 of 3
Heat a large frying pan over high heat. Add corn and cook, stirring, for 5 minutes or until charred. Transfer to a large bowl. Season.
Step 2 of 3
Meanwhile, heat a barbecue or chargrill pan over medium-high heat. Drizzle half the oil over beef. Sprinkle with Cajun seasoning and season with salt and pepper. Cook beef for 3 minutes on each side or until cooked to your liking. Transfer to a plate, cover loosely with foil and rest for 5 minutes. Thinly slice.
Step 3 of 3
Combine corn, onion, chilli, lime juice and remaining oil in a bowl. Season. Divide spinach and rocket leaves, corn salad, beef and avocado among bowls. Serve with extra lime halves and bread.
