- 500grams Woolworths lean beef mince
- 1 free range egg, lightly beaten
- 1/4 cup continental parsley, leaves and stalks separated, finely chopped
- 1tablespoons harissa Middle Eastern spice blend (see Tip)
- 1/4 small red cabbage, finely shredded
- 1 celery heart, thinly sliced
- 1 lemon, juiced
- 1/4 cup extra virgin olive oil
- 4 small wholemeal pita bread rounds, halved, toasted
- 155grams mild chilli peppers (to serve)
- 3/4 cup Greek-style yoghurt
Description
Make your own juicy spiced beef kofta paired with a zesty celery heart and cabbage salad. You can't beat this recipe for a quick and easy dinner.
Instruction tip
Tip:Drain and chop the remaining mild chilli peppers, then stir through to pastas, use as a pizza topping or mix with spices to marinade meat or chicken in.
Method
Step 1 of 4
Preheat barbecue flat plate on high heat. Combine mince, egg, parsley stalks and spice blend in a large bowl. Season. Using damp hands, shape 1/4 cup mince mixture around
1 large metal skewer to form kofta. Repeat with remaining mince mixture to make a total of 12 kofta.

Cook kofta on greased flat plate for 8 minutes, turning occasionally, or until browned and cooked through.
Step 3 of 4
Meanwhile, combine cabbage, celery, lemon juice and oil in a large bowl. Season.
Step 4 of 4
Serve kofta with salad, bread, peppers and yoghurt topped with parsley leaves and pepper.
