- 300grams broccoli, cut into small florets, stems reserved
- 2 spring onions, thinly sliced
- 2 cloves garlic , crushed
- 1/2 cup panko breadcrumbs
- 2tablespoons plain flour
- 1 free range egg, lightly beaten
- 25grams parmesan, finely grated
- 2tablespoons extra virgin olive oil
- 84grams light tasty cheese
- 450grams Woolworths American bbq coleslaw
- 4 bread roll grain jumbo, split
- 1/4 cup Dijon mustard
Description
Try a veggie patty with a twist, loaded with broccoli and parmesan. Whip together these easy veggie burgers for a delicious budget-friendly dinner.
Instruction tip
Tip:Add a little extra breadcrumbs to the patty mixture if you’re having trouble getting it to bind.
Method
Step 1 of 4
Cook broccoli florets and stems in a small saucepan of boiling water for 3 minutes or until tender. Drain. Transfer to a paper towel-lined plate. Pat broccoli with paper towels to remove excess moisture.
Step 2 of 4
Place broccoli, onion, garlic, breadcrumbs, flour, egg and parmesan in a food processor. Process until chopped and combined (do not overprocess). Season with pepper. Shape mixture into 4 patties.
Step 3 of 4
Heat oil in a large frying pan over medium-high heat. Cook patties for 4 minutes or until a golden crust forms, then carefully turn over and cook for a further 4 minutes or until golden and heated through. Remove pan from heat, then place cheese slices over patties.
Step 4 of 4
Meanwhile, prepare coleslaw according to packet instructions. Spread roll bases with mustard. Top each with a patty, followed by a little coleslaw. Sandwich with roll tops. Serve with remaining coleslaw.
