- 375grams flat mushrooms, quartered
- 290grams fire-roasted mixed peppers, drained, reserving oil
- 2tablespoons pure honey
- 2tablespoons pistachio dukkah
- 1 Lebanese cucumber
- 200grams tzatziki
- 40grams baby rocket leaves (to serve)
- 1/3 cup small fresh mint leaves (to serve)

Description
Make vegetables the star of the show with this speedy vegetarian recipe of roasted mushroom skewers.
Method
Step 1 of 4
Preheat oven to 230°C/210°C fan-forced. Line a baking tray with baking paper. Wrap pita in foil and set aside. Thread mushroom onto 8 metal skewers. Combine reserved oil with honey and half the dukkah in a small jug.
Step 2 of 4
Place mushroom skewers on baking tray, brush with half the honey mixture, then bake for 15 minutes, basting with remaining honey mixture halfway through cooking, or until tender and glazed. Warm pita in oven in the last 10 minutes of mushroom cooking time.

Meanwhile, finely dice one-quarter of the cucumber, then thinly slice the remaining into rounds and reserve. Stir finely diced cucumber through tzatziki. Thinly slice peppers. Heat a small frying pan over medium-low heat and toast remaining dukkah for 30 seconds or until fragrant.
Step 4 of 4
Spread tzatziki over pita. Top with rocket, peppers, reserved cucumber and mushroom. Serve scattered with dukkah and mint leaves.
