- 400grams baby red potatoes
- 300grams pasta shells
- 150grams green beans, trimmed
- 4 free range eggs
- 2tablespoons extra virgin olive oil
- 1/2 lemon, juiced
- 1tablespoons honey
- 2teaspoons Dijon mustard
- 200grams Solanato tomatoes, halved
- 1/2 cup pitted kalamata olives, chopped
- 1teaspoons continental parsley leaves (to serve)

Description
Make this classic French nicoise salad recipe with a twist. Our vegetarian version also features pasta which makes it the perfect summer dinner.
Method
Step 1 of 4
Place potatoes in a large saucepan. Cover with water, season with salt, then cover and bring to the boil over high heat. Add pasta and cook according to packet instructions, adding beans for the last 2 minutes of cooking. Drain. Rinse potatoes, pasta and beans under cold water. Drain.
Step 2 of 4
Meanwhile, bring a small saucepan of water to the boil. Add eggs and cook for 6 minutes. Drain and rinse under cold water. When cool enough to handle, peel and halve.
Step 3 of 4
Meanwhile, whisk oil, lemon juice, honey and mustard in a jug. Season.
Step 4 of 4
Quarter potatoes, then arrange on plates with pasta, beans, tomato, olives and egg. Drizzle with dressing and serve scattered with parsley.
