- 3/4 cup brown basmati rice
- 900grams Macro firm classic tofu
- 2tablespoons Woolworths extra virgin olive oil
- 45grams almonds lemon & herb dukkah
- 350grams Woolworths kaleslaw kit
- 1 red capsicum, deseeded, thinly sliced
- 120grams baby spinach leaves
- 1/2 bunch mint, leaves picked
Description
Have a go at dukkah-crusted tofu served on a bed of brown rice, capsicum, spinach and kaleslaw. This tasty vegetarian meal is ready in 20 minutes.
Method
Step 1 of 4
Cook rice according to packet instructions.
Step 2 of 4
Meanwhile, cut each tofu block into 4 slices. Place tofu slices on a board. Rub with half the oil and sprinkle with dukkah. Heat remaining oil in a large non-stick frying pan over medium heat. Cook tofu, in 2 batches, for 2 minutes on each side or until golden and heated through.
Step 3 of 4
Place kaleslaw, reserving dressing from kit, capsicum, rice and spinach in a large bowl. Add reserved dressing and toss to combine. Season with pepper.
Step 4 of 4
Serve rice salad topped with tofu and mint.
