- 1 bunch baby carrots, washed
- 8 free range eggs
- 1/4 bunch coriander, finely chopped
- 3/4 cup milk
- 1tablespoons harissa paste
- 3 cloves garlic , crushed
- 80grams crumbled feta
- 290grams Woolworths Italian style salad kit
Description
Turn heads with this stunning spiced frittata. Ready in 25 minutes, this speedy recipe features sweet baby carrots and creamy feta for a flavoursome feast.
Method
Step 1 of 4
Bring a large frying pan of water to the boil over high heat. Trim carrot tops and reserve. Halve carrots lengthways, then cook for 4 minutes or until just tender. Drain. Dry pan.
Step 2 of 4
Meanwhile, whisk eggs, coriander and milk in a large jug until combined. Season with pepper. Reserve a few carrot tops, then roughly chop remainder.
Step 3 of 4
Preheat grill to medium. Heat oil in same frying pan over medium heat. Cook chopped carrot tops, harissa and garlic for 30 seconds, stirring, or until fragrant. Add egg mixture and stir to combine. Pour
into a large greased baking dish. Grill for 5 minutes. Top with carrot and feta, then grill for a further 5 minutes or until set.
Step 4 of 4
Meanwhile, make salad according to packet instructions. Top frittata with reserved carrot tops. Serve with salad.
