- 400grams chickpeas, rinsed, drained
- 640grams mix-a-mato tomatoes
- 2 rosemary sprigs, leaves picked, finely chopped
- 4 garlic cloves, crushed
- 1/2teaspoons dried chilli flakes
- 375grams dried linguine
- 40grams Woolworths unsalted butter, chopped
- 1 lemon, juiced
- 1/2 bunch basil, leaves picked
Description
Learn how to make luscious roast tomato, rosemary, garlic and chickpea pasta sauce in three easy steps. This speedy linguine is the perfect no-fuss dinner.
Method
Step 1 of 3
Preheat oven to 220°C/200°C fan-forced. Place chickpeas, tomatoes, rosemary, garlic and
chilli in a baking dish and toss to combine. Roast for 15 minutes or until tomatoes begin to blister.
Step 2 of 3
Meanwhile, cook linguine in a saucepan of boiling, salted water according to packet instructions. Drain.
Step 3 of 3
Add linguine, butter, lemon juice and half the basil to baking dish and toss to combine. Season with pepper. Serve linguine topped with remaining basil.
