  • 60grams baby spinach leaves
  • 1tablespoons peanut oil
  • 400milliliter light coconut milk
  • 400grams green tiger prawns, peeled, deveined, tails intact
  • 225grams Macro Organic firm tofu, cut into 2cm cubes
  • 100grams snow peas, trimmed
  • 1 cup frozen peas
  • 450grams microwave white long-grain rice
  • 1/4 bunch coriander, leaves picked

Description

Take your curry to the next level with this fragrant prawn curry recipe. Juicy prawns are cooked in a beautiful green curry sauce with tofu and peas.

Method

Step 1 of 3

Place paste, spinach and 1/3 cup water in a small food processor. Process until smooth.

Step 2 of 3

Heat oil in a large saucepan over high heat. Add paste mixture and cook, stirring, for 2 minutes or until fragrant. Add coconut milk and 1 cup water, then bring to the boil. Add prawns and tofu, then cook for 4 minutes or until prawns are cooked through. Add snow peas and peas, then cook for 1 minute or until just tender.

Step 3 of 3

Meanwhile, heat rice according to packet instructions. Top curry with coriander and serve with rice.
