  • 550grams skinless barramundi fillets (2 fillets)
  • 1/3 cup whole egg mayonnaise
  • 1/2 small lime, juiced (plus extra lime wedges to serve)
  • 1/4 red cabbage, finely shredded
  • 1 spring onion, sliced
  • 1tablespoons coriander leaves, finely chopped (plus extra sprigs to serve)
  • 1 baby cos lettuce, leaves separated

Description

After the ultimate fish taco recipe? Try this spiced barramundi that's baked, topped with a zingy mayo dressing and wrapped up in lettuce leaves.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper.

Step 2 of 4

Combine oil and 1 tbs seasoning in a large bowl. Add fish and rub to coat. Place on tray and bake for 10 minutes or until cooked through.

Step 3 of 4

Meanwhile, place mayonnaise, lime juice and remaining seasoning in a small bowl. Stir until combined. Mix cabbage, onion and chopped coriander in a separate bowl. Drizzle with half the mayonnaise dressing.

Step 4 of 4

Fill lettuce leaves with flaked fish, cabbage mixture, mayonnaise dressing and extra coriander. Serve with extra lime wedges.
