  • 250grams spreadable butter
  • 1kilograms medium green prawns, peeled, deveined, tails intact
  • 1 large avocado, cut into wedges
  • tomatoes, sliced (and lime cheeks, to serve)
  • 1/3 cup coriander sprigs, finely chopped
  • 1 large lime, finely grated rind (and 2 tbs juice)
  • 1tablespoons chipotle in adobo sauce
  • brioche slider buns (to serve)
  • iceberg lettuce, shredded (to serve)
  • 1tablespoons olive oil

Method

Step 1 of 3

Place Western Star Spreadable Original Soft, chipotle, lime rind, lime juice and coriander in a bowl and stir until well combined. Spoon into a serving bowl.

Step 2 of 3

Heat a barbecue hotplate or frying pan over a medium heat. When hot, add extra Western Star Spreadable Original Soft and oil. When the Spreadable has melted, add prawns and cook for 8-10 minutes, turning occasionally, or until cooked.

Step 3 of 3

Place prawns on a platter topped with dollops of the flavoured Spreadable mixture while hot. Serve prawns with halved, toasted brioche buns, shredded lettuce, avocado, tomato, lime cheeks and remaining Spreadable mixture.
