  • 1/2 long green chilli, finely chopped
  • 2tablespoons extra virgin olive oil
  • 24 fresh Pacific oysters
  • 1/4 bunch mint, leaves picked

No Christmas is complete without a seafood spread, and these elegant oysters topped with a zesty dressing will add a real sparkle to your festive feast.

Method

Step 1 of 2

Roughly chop half of the cucumber. Place chopped cucumber, lime juice, parsley, chilli and oil in a small food processor. Process until smooth. Season.

Step 2 of 2

Finely chop remaining cucumber. Arrange oysters on a large serving platter. Serve with dressing, finely chopped cucumber, mint leaves and lime cheeks.
