  • 1/2 cup sugar
  • 1 cup vanilla ice cream (to serve)
  • 1/4 large watermelon
  • 16 fresh lychees, peeled and pitted (canned lychees can be used instead)
  • 1/4 cup mint, shredded
  • 4 scoops vanilla ice cream (to serve)

Method

Step 1 of 2

Combine sugar and ½ cup water in a small saucepan and stir over medium heat until sugar dissolves.

Step 2 of 2

Add shredded mint and leave to cool. Cut a large watermelon into slices. Divide between serving bowls and add peeled and pitted fresh lychees. Pour over syrup and garnish with mint leaves. Serve with scoops of vanilla ice cream.
