- 1/2 cup sake
- 4 salmon cutlets
- 4 cm piece fresh ginger, peeled, finely grated
- 3 green shallots, ends trimmed, thinly sliced
- 80grams pickled pink ginger (to garnish)
- 200grams udon noodles (to serve)
- 1 pinch pepper (for seasoning)
- 2tablespoons soy sauce
- 1teaspoons caster sugar
- 1 pinch salt (to taste)

Method
Step 1 of 3
Combine sake, shallots, ginger, soy sauce and sugar in a bowl. Season with salt and pepper. Place salmon cutlets into a shallow ceramic dish. Pour over sake mixture. Cover and refrigerate for at least 30 minutes.
Step 2 of 3
Heat a BBQ plate or chargrill over high heat. Cook salmon cutlets for 2 minutes each side or until cooked to your liking. Transfer to a plate and cover with foil to keep warm. Repeat.
Step 3 of 3
Meanwhile, cook noodles following packet instructions. Divide noodles evenly among serving plates. Top with salmon and sprinkle with ginger and shallots to serve.
