- 1 brown onion, finely chopped
- 1 chicken stock cube, crumbled
- 500grams Woolworths frozen salmon fillets, skin on, thawed
- 450grams microwave brown rice
- 1/2 iceberg lettuce, cut into thin wedges
- 1 cup frozen peas
- 100grams snow peas, trimmed, halved diagonally
- 1 lemon, zested, cut into wedges
- 1/4 bunch mint, leaves picked

Description
This nutritionally approved salmon recipe with braised lettuce, peas, brown rice and mint is sure to make a regular appearance at your dinner table.
Method
Step 1 of 4
Heat half the oil in a large frying pan over medium-high heat. Cook garlic and onion, stirring, for 5 minutes or until softened. Add 1 1/2 cups water and stock, then bring to the boil. Reduce heat to medium and simmer, uncovered, for 2 minutes or until liquid has reduced by one-third.

Meanwhile, heat remaining oil in a medium frying pan over medium-high heat. Cook salmon for 3 minutes on each side or until just cooked through.
Step 3 of 4
Heat rice according to packet instructions. Add lettuce to stock mixture and cook, turning once, for 3 minutes or until wilted. Add peas and snow peas, then cook for 1 minute or until tender. Season with pepper and stir in zest.
Step 4 of 4
Divide rice among bowls and serve topped with lettuce mixture, salmon, lemon wedges and mint.
