  • 1/2 cup thickened cream
  • 500grams Vetta Rural Aid Fettuccine Pasta
  • 1 free-range egg, plus 1 egg yolk
  • 1 bunch broccolini, halved lengthways
  • 4tablespoons Alfa One rice bran oil
  • 1 lemon, to serve
  • 1/4 cup Perfect Italiano Shaved Parmesan , plus extra to serve
  • 460grams Tassal Tassie salmon skin off
  • 2 cloves garlic, finely chopped

Method

Step 1 of 4

Cook pasta according to packet instructions. Meanwhile, heat 2 tbsp of oil in a pan over medium heat, add salmon and cook for 5 mins either side. Once cooked, place the salmon on a plate and break into pieces.

Step 2 of 4

In the same pan, heat remaining oil then cook broccolini and garlic over medium heat until slightly charred.

Step 3 of 4

For sauce, mix cream, eggs and parmesan. Drain pasta then add to pan with sauce mix.

Step 4 of 4

Serve pasta with salmon, broccolini and a squeeze of lemon. Top with parmesan and enjoy!
