  • 1 brown onion, finely diced
  • 400grams spirals pasta
  • 1 lemon, rind grated
  • 3tablespoons lemon juice
  • lemon, zested (to serve)
  • pepper (for seasoning)
  • 150grams smoked salmon, thinly sliced
  • 1tablespoons olive oil
  • 1/4 cup dill, finely chopped
  • dill (to serve)
  • 300milliliter light thickened cream
  • 1 pinch sea salt, ground (to taste)

Method

Step 1 of 4

Cook pasta in a large saucepan of boiling, salted water until just tender. Drain and return to saucepan.

Step 2 of 4

Heat oil in a frying pan over a medium heat. Add onion and cook for 3 minutes or until soft. Add cream and stir until combined. Bring mixture to a simmer. 

Step 3 of 4

Combine rind, 3 tablespoon of lemon juice and cornflour in a bowl. Stir into cream mixture. Simmer until sauce thickens. Remove from heat and stir through dill and salmon. Season with salt and white pepper.

Step 4 of 4

Pour sauce over pasta and toss to combine. Divide pasta between serving bowls. Garnish with dill and lemon zest to serve.
