- 12 cherry tomatoes
- 1tablespoons olive oil
- 350grams dried pasta, such as penne
- 350grams leftover baked salmon, flaked into chunks
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 15milliliter chilli oil, drizzle

Method
Step 1 of 2
Preheat the oven to 200°C (Gas 6). Put the cherry tomatoes in a roasting tin, and drizzle over the olive oil. Roast in the oven for 15-20 minutes, until the tomatoes are beginning to char slightly and the skins are bursting.

Meanwhile, cook the pasta in a pan of boiling salted water for about 10 minutes, or until it is cooked but still has a bit of bite to it. Drain, and return to the pan with a little of the cooking water. Add the leftover salmon and roast tomatoes, toss together, and season with salt and black pepper. Drizzle over a little chilli oil, and serve immediately.
