  • 500grams spaghettini
  • 2tablespoons extra virgin olive oil
  • 2tablespoons capers
  • 2-3 cloves garlic, crushed
  • 1 lemon
  • 2tablespoons fresh dill, chopped
  • 2 cups baby spinach leaves
  • 2 pinches parmesan cheese, finely shredded (for serving)

Description

This Sicilian inspired pasta dish is enhanced further with the addition of aromatic, fresh dill.

Method

Step 1 of 4

Cook pasta following packet directions. Drain and keep pasta hot.

Step 2 of 4

Heat olive oil and reserved John West Tuna oil in a non stick frypan over medium heat. Add capers and cook for 1 minute. Add garlic and cook until fragrant, but not coloured.

Step 3 of 4

Add hot pasta, flaked John West Tuna, dill, finely grated lemon zest, and spinach, cook stirring gently for a further 1-2 minutes until heated and spinach has wilted. Adjust ‘sauciness’ with lemon juice, if desired.

Step 4 of 4

Served topped with parmesan cheese and cracked pepper.
