  • 2 bay leaves

  • 200grams white button mushrooms
  • 2 cup salt-reduced chicken stock
  • 1 cup parmesan, finely grated
  • 300grams dried curly fettuccine
  • 200grams shaved leg ham
  • 120grams baby spinach leaves
  • 1/2 cup olive oil
  • 1 bunch chives
  • 3 cloves garlic

Method

Step 1 of 3

Heat oil in a large heavy-based saucepan over high heat. Add onion, garlic, mushroom and bay leaves, and cook for 2 minutes. Stir in wine and ham and cook for a further 6 minutes or until vegetables soften.

Step 2 of 3

Add pasta, stock and 2 cups water and bring to the boil. Cook for 10 minutes, stirring regularly, or until pasta is al dente and most of the liquid has been absorbed.

Step 3 of 3

Stir through three-quarters of parmesan and spinach and stand for 5 minutes to thicken slightly. Top with remaining parmesan and chives, season with black pepper and serve.
