  • 500grams tomatoes
  • 1 pinch pepper
  • 1 lime, cut into wedges (to serve)
  • 2 cloves garlic, peeled and left whole
  • 1tablespoons chipotle paste
  • 5tablespoons olive oil
  • 400grams vermicelli pasta nests
  • 1 shallot, finely chopped
  • 2 cups vegetable stock
  • 300grams fresh white crabmeat
  • 1 pinch salt

Method

Step 1 of 5

Put the tomatoes in a broiler pan and cook under a preheated hot broiler for 10 minutes, turning once. Add the garlic and cook for another 3-5 minutes until softened and charred. Let cool slightly, then transfer to a food processor or blender, add the chipotle paste and blend to a coarse paste. Season and set aside.

Heat the oil in a large skillet, add the pasta nests and cook for 1-2 minutes, until starting to brown, then turn the pasta over and cook for another 1 minute. Remove from the pan.

Add the shallot to the pan and cook for 3 minutes, until softened, then add the tomato sauce and stock. Bring to a boil, then reduce the heat and simmer for 15 minutes.

Return the pasta to the pan and cook gently, stirring frequently, until the pasta is tender and most of the liquid has been absorbed.

Step 5 of 5

Spoon the pasta onto serving plates and sprinkle with the crabmeat. Serve with lime wedges.
