- 1/2 bunch lemon thyme
- 2/3 cup macadamias
- 2 slices white bread, roughly torn
- 1 bunch chives, roughly chopped
- 2tablespoons extra virgin olive oil
- 720grams fresh Australian saltwater barramundi fillets, skin on
- 270grams creamy & crunchy salad kit
- 2 small lemons, cut into wedges
Description
Learn how to cook barramundi with a delicious herb and macadamia crust. It's on the table in just 25 minutes and it's sure to impress.
Method
Step 1 of 3
Preheat oven to 230°C/210°C fan-forced. Line a baking tray with baking paper and lightly grease paper.
Step 2 of 3
Reserve 3 thyme sprigs. Pick leaves from remaining thyme sprigs. Place macadamias, bread, chives, oil and thyme leaves in a food processor and process until almost fine crumbs form. Place fish, skin-sides down, on tray. Press crumb mixture over fish. Bake for 15 minutes or until crumb is golden and fish is cooked through (cover loosely with foil if over-browning).

Meanwhile, prepare salad according to packet instructions. Sprinkle fish with reserved thyme sprigs and serve fish with salad and lemon.
