Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper. Place pumpkin on tray. Drizzle with oil, then season. Roast for 15 minutes or until tender.

Step 2 of 4

Place tabbouleh in a large bowl. Add pumpkin, tossing to combine. Season.

Step 3 of 4

Place gravy in a small saucepan and bring to the boil, stirring occasionally, over medium heat.

Step 4 of 4

Slice pork. Serve pork drizzled with gravy and with tabbouleh mixture.
