  • 100-150grams rolled oats
  • 200-250grams seeds, nuts and dried fruit
  • 1/4 cup coconut oil
  • 1/4 cup water, boiling
  • 1/2 cup rice malt syrup

Simple and healthy snack for the whole family.
Instruction tip
You can use your choice of seeds, dried fruit and nuts to your liking. My favourite combo is sultanas, chia seeds, pepitas, almonds and cashews.

Method

Step 1 of 5

Preheat oven to 160 degrees (fan forced) and line a slice tray with baking paper

Prepare any nuts by chopping them up roughly

Step 3 of 5

Combine all your dry ingredients to make up a total of 350g. Together with my rolled oats. I have used chia seeds, pepitas, sultanas, almonds, cashews and pecans.

Step 4 of 5

Add the rice malt syrup, coconut oil and boiling water to a heat proof bowl and mix until combined (and coconut oil is melted). Pour into dry ingredients and mix until combined.

Step 5 of 5

Pour mixture into prepared slice tin and press down. Cook in oven for approximately 40 mins, you can cook for a little longer if you prefer crispier muesli bars.
