- 400milliliter canned light coconut milk
- 1/4 cup peanut butter
- 2tablespoons brown sugar
- 2teaspoons soy sauce
- 1packets recipe base chow mein mince
- 2tablespoons fresh coriander (to garnish)
- 280grams rice, steamed (to serve)

Description
Use satay sauce in a new way with this satay meatballs recipe. Serve over rice and garnish with fresh coriander.
Method
Step 1 of 3
Heat oil in a large frying pan over medium-high heat. Cook meatballs for 8 minutes, turning occasionally, or until browned on all sides.
Step 2 of 3
Combine coconut milk, peanut butter, brown sugar, soy sauce and add the recipe base in a jug. Pour over meatballs. Bring to the boil, stirring.
Step 3 of 3
Reduce heat to medium low and simmer, stirring occasionally, for 8-10 minutes or until sauce has thickened slightly and meatballs are cooked through. Garnish with coriander leaves and serve with rice
