  • 1 red capsicum, halved, deseeded, thickly sliced
  • 1 red onion, cut into wedges
  • 2tablespoons vegetable oil
  • 450grams pkt Woolworths COOK stir fry hokkien noodles
  • 1 bunch choy sum, cut into 5cm lengths
  • 1teaspoons toasted sesame seeds
  • 1/4 cup coriander leaves

After an easy chicken recipe? Try this traybake that's full of veggies, honey soy chicken and noodles, and takes only 20 minutes to make.

Method

Step 1 of 2

Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with sides with baking paper. Place chicken on one half of tray. Combine capsicum and onion on remaining half of tray. Drizzle vegetables with oil and toss to coat. Bake for 10 minutes or until chicken is just cooked through.

Meanwhile, place noodles in a heatproof bowl and cover with boiling water. Stand for 3 minutes. Drain, reserving 2 tbs cooking liquid. Add noodles, reserved cooking liquid and choy sum to tray and toss to coat. Bake for 5 minutes or until vegetables are tender. Divide among bowls and serve scattered with sesame seeds and coriander.
