Description

This dish has something for everyone: Mexican chilli con carne flavours, juicy meatballs, risoni pasta and fresh tomatoes. The complete package!

Method

Step 1 of 4

Heat oil in a large deep frying pan over medium-high heat. Add meatballs and cook, turning, for 5 minutes or until browned. Transfer to a plate and cover to keep warm.

Step 2 of 4

Add half the tomato and cook for 2 minutes or until beginning to collapse. Add chilli con carne recipe base and cook, stirring, for 1 minute.

Step 3 of 4

Add 4 cups water, stirring to combine. Bring mixture to the boil, then reduce heat to medium.

Step 4 of 4

Add risoni and meatballs and cook, stirring frequently, for 12 minutes or until risoni is tender. Top with remaining tomatoes. Season, then serve.
