Description
Try this easy chicken tikka masala recipe with pumpkin. It’s ready in 20 minutes but will taste like you’ve been cooking for hours.
Method
Step 1 of 4
Place pumpkin in a microwave-safe bowl, cover, then microwave on high for 2 minutes or until thawed. Drain.
Step 2 of 4
Heat rice according to packet instructions.
Step 3 of 4
Meanwhile, heat oil in a large, deep frying pan over medium-high heat. Add spices from masala packet and cook for 20 seconds or until fragrant. Add chicken and cook for 3 minutes or until browned. Add base sauce from masala packet. Reduce heat to medium, then simmer for 2 minutes or until fragrant.
Step 4 of 4
Add main sauce from masala packet and pumpkin. Simmer for a further 6 minutes, stirring occasionally, or until chicken is cooked through. Serve curry over rice.
