  • 1tablespoons vegetable olive oil
  • 2 small brown onions, halved, thinly sliced
  • 185grams Thai yellow curry paste
  • 500grams Woolworths RSPCA Approved chicken thigh fillets, cut into quarters
  • 270milliliter coconut milk
  • 450grams microwave white long-grain rice, heated to serve
  • 1/3 bunch coriander, leaves picked

Description

It takes just five ingredients and 40 minutes to create this easy chicken curry that's bursting with flavour and colour.

Method

Step 1 of 4

Heat oil in a large saucepan over medium-high heat. Add onion and curry paste and cook, stirring, for 2 minutes or until onion softens slightly.

Step 2 of 4

Add chicken to pan and cook, stirring, for 5 minutes or until browned.

Step 3 of 4

Add coconut milk and 1 cup water and bring to the boil. Reduce heat to low and and simmer, stirring occasionally, for 20 minutes or until chicken is cooked.

Step 4 of 4

Spoon rice among bowls. Top with chicken curry. Serve sprinkled with coriander.
